Vegetables

Vegetables...yes, they can be very tasty and they are so good for you!  Popeye knew what he was talking about!  A vegetable usually refers to the edible parts of plants, and is a culinary, not botanical, term.  Some botanical fruits such as tomatos, eggplant and bell peppers are usually cooked in such a fashion that they are labeled as vegetables. Vegetables can be eaten raw or cooked, and their nutritional content contains high amounts of vitamins, provitamins, dietary minerals, fiber and carbohydrates.  Many vegetables contain chemicals that help fight germs, viruses, fungi and even cancer as well as helping to strengthen the body's immune system.  And sorry, french fries are NOT a vegetable!
